Ingredients for Mamidikaya Pulihora :
- 2 medium raw mango
- salt as required
- 2 tablespoon cashews
- 5 cup rice
- 4 tablespoon raw peanuts
- 2 tablespoon refined oil
- 1 1/2 tablespoon chana dal
- 1 1/2 teaspoon mustard seeds
- 1 tablespoon split black gram
- 1 teaspoon ginger
- 1/2 teaspoon asafoetida
- 2 red chilli
- 4 green chilli
- 8 curry leaves
- 1/2 teaspoon turmeric
How to make Mamidikaya Pulihora :
- Place a pan over medium flame and heat oil in it. Add mustard seeds, chana dal and split black gram. Fry them until they turn golden. Now, put curry leaves, green chillies, red chillies, ginger, turmeric and asafoetida. Toss well.
- Turn the flame to low setting and add peanuts, cashews and raw mango pieces. Fry them for few seconds and add cooked rice in it.
- Add salt and mix well. Turn off the flame and cover with a lid for few minutes. Serve hot with your choice of side dish!
