Ingredients to make Pakistani Jeera Pilaf :
- Basmati Rice washed and soaked for 20 minutes 1 kilogram
- Bay Leaves 4
- Cinnamon sticks medium 3
- Cumin seeds 2 tablespoons
- Cardamom green 3
- Black Cardamom 2
- Cloves 4
- Green Chillies slit lengthwise 5
- Onion big sized 2 thinly sliced
- Ginger garlic paste 1 teaspoon
- Salt 1.5 tablespoons
- Garam Masala 1 teaspoon
- Water 5 cups for 5 cups Rice .
- Coriander leaves a bunch
- Ghee 2 tablespoons
- Vegetable Oil 3 tablespoons
How to make Pakistani Jeera Pilaf :
In a cooking pot , heat 2 tablespoons ghee .
Add all the listed whole spices , cumin seeds . Fry for a minute .
Add green chillies .
Fry for 2 seconds .
Add sliced onions and sauté till golden brown .
Add ginger garlic paste . Sauté till raw smell leaves .
Add 1/2 cup coriander leaves .
Add salt .
Add the drained rice and fry gently for 4 minutes .
Measure water : rice 1 : 1 and pour the measures water to the cooking pot .
Cover the pot once the water started boiling along with the rice.
Cook under medium flame for 10 minutes .
Garnish with another half cup of fresh coriander leaves .
Pakistani Jeera Pilaf is ready to serve .
Serve hot with Karahis/ Nirahis.
