How to make Masala Sambhar

    Ingredients to make Masala Sambhar :

  • Arahar Dal – 1 Cup
  • Fresh Coriander chopped – 2 Tbsp
  • Bottle Gourd diced – 1 cup
  • Tomatoes chopped – 1/2 cup
  • Onions small – 4
  • Drumsticks cut – 2 or 3
  • Curry Leaves – 8 or 10
  • Mustard Seeds – 1 tsp
  • Tamarind water – 1/3 to 1/2 cup
  • Sambhar Masala – 3 tbsp
  • Asafoetida – 2 pinches
  • Chilli powder – 2 tsp
  • Turmeric powder – 1/2 tsp
  • Salt to tasteOil to fry
  • Garnish : Whole red Chillies – 2 or 3
  • Fresh Coriander chopped – 1 Tbsp
  • Desi ghee/Oil – 1 tbsp

    How to make Masala Sambhar :

  • Wash and soak the Arahar dal for 15 minutes, add it in a pressure cooker with 2 cups water. Wait for 3 whistles.
  • Simultaneously broil the drumsticks and bottle gourd with 1 cup of water till the vegetables soften.
  • Put a deep dish pan on high flame, add some oil and lower the flame on medium.
  • Add in the curry leaves, cumin seeds and asafoetida.
  • Next put in the tomatoes and the other two vegetables.
  • Take out the pressure cooked dal and blend, I used a hand blender, till smooth.
  • Stir in the dal paste after the tomatoes.
  • Bring to a boil, add in the spices starting with sambhar masala, turmeric, chili powder and salt to taste.
  • Add in the tamarind water as per taste. I have added 1/2 cup.
  • Bring to a boil one more time, then cover and keep the flame on low. Stir occasionally.
  • Add 1 tbsp freshly chopped coriander and stir.
  • For Garnish: Fry whole red chilies in 1 tbsp ghee and pour over the sambhar
  • Sprinkle some green coriander and serve hot.
