Ingredients to make Marwardi Aloo Pyaj ki Subji :
- 2 Potatoes chopped quarterly
- 2 Onions chopped quarterly
- 1 tbsp besan/Chickpea flour
- 1 tsp Jeera/cumin
- 2 tbsp Oil
- 1 tsp Mustard Seeds
- 1/4 tsp Hing
- Salt to taste
- 1 long whole red chili
- 1 Bay Leaf
- 1 tsp Turmeric powder
- 2 tsp red chili powder
- 2 tsp Cumin coriander powder
- Lime juice to taste
- lots of fresh Coriander leaves chopped for garnish
- To make powder: 1 tbsp fennel seeds/Saunf, 1 tbsp Corianderseeds/Whole dhaniya seeds
How to make Marwardi Aloo Pyaj ki Subji :

Crush the fennel and coriander seeds in a mortar. You do not need a fine powder, so do not use a grinder,little bits will give you a nice taste in every bite.

Heat a non stick pan. Add oil in it. Then add mustard seeds, when they pop, add cumin seeds, when they change the colour, add hing, bay leaf and whole red chili.

Then add fennel and coriander powder and mix it.

Add onion, potatoes and turmeric powder and salt and cover it and let it cook on medium flame. When the potatoes are cooked, add red chili powder, cumin-coriander powder and besan, mix it nicely.

Cover again and cook for 5 more minutes. Serve hot with rotis.
