    Ingredients to make Marwardi Aloo Pyaj ki Subji :

  • Potatoes chopped quarterly
  • Onions chopped quarterly
  • 1 tbsp besan/Chickpea flour
  • 1 tsp Jeera/cumin
  • 2 tbsp Oil
  • 1 tsp Mustard Seeds
  • 1/4 tsp Hing
  • Salt to taste
  • 1 long whole red chili
  • Bay Leaf
  • 1 tsp Turmeric powder
  • 2 tsp red chili powder
  • 2 tsp Cumin coriander powder
  • Lime juice to taste
  • lots of fresh Coriander leaves chopped for garnish
  • To make powder: 1 tbsp fennel seeds/Saunf, 1 tbsp Corianderseeds/Whole dhaniya seeds

    How to make Marwardi Aloo Pyaj ki Subji 

  • Crush the fennel and coriander seeds in a mortar. You do not need a fine powder, so do not use a grinder,little bits will give you a nice taste in every bite.
  • Heat a non stick pan. Add oil in it. Then add mustard seeds, when they pop, add cumin seeds, when they change the colour, add hing, bay leaf and whole red chili.
  • Then add fennel and coriander powder and mix it.
  • Add onion, potatoes and turmeric powder and salt and cover it and let it cook on medium flame. When the potatoes are cooked, add red chili powder, cumin-coriander powder and besan, mix it nicely.
  • Cover again and cook for 5 more minutes. Serve hot with rotis.
