How to make Maharastrian Puran Poli

    Ingredients to make Maharastrian Puran Poli :

  • 1 cup: Chana Dal
  • 2.5 cups: Water
  • 1 cup: Jaggery
  • 1 tsp: Cardamom powder
  • 1 cup: Whole Wheat Flour
  • 1/2 cup: All Purpose Flour
  • 1/2 tsp: Salt
  • 1 tbsp: Oil
  • Water as needed
  • Ghee for frying

    How to make Maharastrian Puran Poli :

  • For the Puran: Wash and soak the dal in 2.5 cups of water for 6 hours.
  • Later add the dal along with its soaking water into a pressure cooker and cook for three whistles.
  • Turn off the heat and allow the pressure to release by itself.
  • Later open the cooker and mash the dal with a potato masher.
  • Take the mashed soft dal into a microwave safe bowl and add jaggery. Mix and microwave on high for five minutes.
  • After five minutes, take the bowl out and mix well. Place the bowl back in microwave and cook for 3 more minutes.
  • By now all the moisture gets evaporated and the mixture gets dry to touch. Add cardamom powder, and mix well. Puran is ready!
  • For the dough: In another bowl add wheat flour, maida, oil, salt and give it a good mix. Now by adding water as required knead this into a soft pliable dough.Cover and rest the dough for an hour.
  • Add a tsp of oil and knead the dough again for a minute or two.
  • Divide the dough and Puran into small equal portions.
  • Roll out each dough ball into a thick poori like and stuff with the Puran ball seal its edges and roll out into a thin stuff paratha dusting with dry flour if required.
  • Fry the rolled Poli on medium high heat Tawa smearing ghee on both the sides until golden spots appear.
  • Once fried to perfection, fold and serve.
