Ingredients to make Gaajar Ki Kheer (Pakistani Rice and Carrot Pudding). :
- Full fat milk 2 litres + 1/2 a litre extra
- Carrots (red ones) shredded 1/2 kg
- Sugar 1 cup
- OR
- Condensed milk 1 tin (397gm)
- Khoya/Mawa 1/2 cup (optional)
- Cardamom pods crushed 3
- Almonds slivered 1/3rd cup
- Walnuts slivered 1/4th cup
- Pistachios slivered 1/4th cup
- Boiled Rice 1 1/2 cup
- Ghee 1/2 cup
- Kewra essence 1/2 tsp
How to make Gaajar Ki Kheer (Pakistani Rice and Carrot Pudding). :

Bring milk to a rolling boil on a high heat.

After it starts boiling, lower the flame and allow it to simmer.

Now blend in that extra half a litre of milk and boiled rice until smooth in a blender.

Heat ghee in a pan and stir fry the shredded carrots until the raw smell fades away.

Add this to the boiling milk along with the cooked rice mix.

Cover and cook until tender and smooth without any lumps.

After the carrots and the rice mix is cooked, add in sugar or condensed milk.

Keep stirring in between so that it doesn’t stick to the bottom.

After the desired consistency is achieved, add half of the slivered mixed nuts.

Top it with khoya.

And garnish with the remaining mixed nuts.

Chill it in the refrigerator for an hour or two.

Serve it chilled to your family and guests.
