How to make Bengali Aloo Dum

    Ingredients to make Bengali Aloo Dum :

  • 1kg – Boiled baby Potatoes
  • 1 tablespoon – Cumin powder
  • 1 tbsp- Coriander powder
  • 1 tbsp- Kashmiri Chilli Powder
  • 1 tsp – Turmeric powder
  • 2 tbsp- Ginger paste
  • 1 Cup – Tomato puree
  • 2 tsp – Green Chilli paste
  • ½ litre – Mustard oil
  • 2/3 – Bay Leaves
  • 1 tsp – Cumin seeds
  • Salt and Sugar to taste
  • Handful of freshly chopped Coriander
  • 1 tbsp – Bhaaja Moshla Bhaaja Moshla
  • 1 tablespoon whole coriander 
  • 1 tablespoon Cumin
  • 2/3 dry red chilies to be dry roasted and ground.

How to make Bengali Aloo Dum :

  • Deep fry the baby potatoes marinated with turmeric and salt.
  • In a pan temper whole cumin and bay leaves.
  • Add ginger paste and then tomato puree.
  • Add green chilli paste.
  • Saute well until the moisture disappears and the oil separates.
  • Add the fried potatoes. Add bhaaja moshla.
  • Adjust salt and sugar.
  • Finish this with freshly chopped coriander.
