How to Cook Vegetarian Chili

Ingredients for Vegetarian Chili :

  • 1 cup red kidney beans
  • 1 cup black beans
  • 1 cup pinto beans
  • 1 cup frozen sweet corn
  • 1 red bell pepper
  • 1 capsicum (green pepper)
  • 1 red onion
  • 400 gm tomato
  • 1 cup vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon coriander leaves
  • 1 teaspoon cocoa powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • 2 dashes soy sauce
  • 1/2 teaspoon salt
  • paprika powder as required
  • 2 teaspoon virgin olive oil

How to Cook Vegetarian Chili :

  1. Start by placing a pan over medium flame and add olive oil in it. Once oil is hot, add crushed garlic, diced red onion, diced green capsicum, diced red bell pepper in it and saute them until the vegetables are tender. In the mean time, add the tomatoes to a blender and blend to make a puree.
  2. Next, add the pureed tomatoes, cumin, garlic powder, vegetable broth, cocoa powder to the pan and mix well. Saute these well and then, add rinsed kidney beans, black beans, pinto beans, paprika powder, cayenne pepper, black pepper and a few splashes of soy sauce to the pan and mix all the spices well. Let it cook for some time and bring it to boil. Once it thickens, add salt over it and reduce the heat. Let it simmer for some time.
  3. Once done, Serve this hot with some nachos or chips or crackers.
