Ingredients to cook Turai Ki Sabzi :
- Turai / Ridge gourd – 4, medium size
- Cumin seeds – 1/2 tsp
- Mustard Seeds – 1/2 tsp
- Red Chilli powder – 1 & 1/2 tsp
- Turmeric powder – 1/2 tsp
- Garam Masala Powder – 1 tsp
- Grounded coarse Peanut powder – 1/2 tbsp
- Water – 2 cups
- Cooking Oil – 3 tbsp
- Salt – As required
- 1 tbsp Coriander leaves, finely chopped
How to cook Turai Ki Sabzi :

Wash and peel the ridge gourd.

Chop off the top and bottom tip.

Chop the ridge gourd into about 1.5 inch thick chunks and slit it from the middle so that both ends remain uncut & make a cavity for the masala.

Heat oil in a pan. Add cumin seeds and mustard seeds. Allow them to crackle.

Add red chili powder, turmeric powder and garam masala powder. Saute for few seconds.

Then add ridge gourd chunks, salt and water.

Mix it well and cook covered for 7 to 8 minutes on low flame or until the vegetable gets soft and blends well with the masala.

Mix once in between.

When the vegetable gets soft, add grounded coarse peanut powder and simmer open.

Let the water evaporate until you get the desired consistency.

Keep checking and when oil starts appearing that says the curry is done well and perfect to be served.

Garnish with chopped coriander leaves.

Serve hot.
