How to cook Turai Ki Sabzi | Ridge Gourd Sabzi

    Ingredients to cook Turai Ki Sabzi :

  • Turai / Ridge gourd – 4, medium size
  • Cumin seeds – 1/2 tsp
  • Mustard Seeds – 1/2 tsp
  • Red Chilli powder – 1 & 1/2 tsp
  • Turmeric powder – 1/2 tsp
  • Garam Masala Powder – 1 tsp
  • Grounded coarse Peanut powder – 1/2 tbsp
  • Water – 2 cups
  • Cooking Oil – 3 tbsp
  • Salt – As required
  • 1 tbsp Coriander leaves, finely chopped

    How to cook Turai Ki Sabzi :

  • Wash and peel the ridge gourd.
  • Chop off the top and bottom tip.
  • Chop the ridge gourd into about 1.5 inch thick chunks and slit it from the middle so that both ends remain uncut & make a cavity for the masala.
  • Heat oil in a pan. Add cumin seeds and mustard seeds. Allow them to crackle.
  • Add red chili powder, turmeric powder and garam masala powder. Saute for few seconds.
  • Then add ridge gourd chunks, salt and water.
  • Mix it well and cook covered for 7 to 8 minutes on low flame or until the vegetable gets soft and blends well with the masala.
  • Mix once in between.
  • When the vegetable gets soft, add grounded coarse peanut powder and simmer open.
  • Let the water evaporate until you get the desired consistency.
  • Keep checking and when oil starts appearing that says the curry is done well and perfect to be served.
  • Garnish with chopped coriander leaves.
  • Serve hot.
