Ingredients for Pineapple Gojju :

  • 2 cup pineapple
  • 1 cup grated coconut
  • 1 tablespoon tamarind
  • 1 1/2 teaspoon mustard seeds
  • salt as required
  • 2 tablespoon urad dal
  • 1 1/2 tablespoon jaggery
  • 2 dry red chili
  • 10 curry leaves
  • 3 tablespoon vegetable oil

How to Cook Pineapple Gojju :

  1. Heat a pan over medium flame and add urad dal in it. Dry roast for 2 minutes and take out in a bowl. Then, dry roast coconut with red chillies in the same pan and keep aside. In a grinder, add these ingredients with a little water and tamarind. Grind well to make a paste.
  2. Heat oil in a pan over medium flame and put mustard seeds, curry leaves and pineapple cubes in it. Add some water with salt, jaggery and the prepared paste. Mix everything well and let it simmer for 10 minutes. Serve hot with steamed rice or chapati.
