Ingredients to cook Gujarati kadhi :
- Curd – 1 cup
- Chickpea flour/besan – 2 -2 and 1/2 tbsp
- Sugar – 1-2 tbsp
- Salt as required
- Ginger -green chili paste -1/2tbsp
- Water – 1 cup
- For tempering:
- Ghee -1 tbsp
- Mustard Seeds -1 tsp
- Cumin seeds -1 tsp
- Cinnamon– 1 stick
- Cloves -3-4
- Dry red chillies- 1-2
- Curry Leaves – 1 tbsp
- Asafoetida/hing – 1/4 tsp
- Coriander leaves – 1-2 tbsp / one handful
How to cook Gujarati kadhi :
Take a bowl, add the besan, curd, salt, ginger-green chili paste, sugar and water.
Mix it well and make a medium thin batter.
Then heat a kadai with 1 tbsp of ghee, add the mustard seeds, cumin seeds, once it starts crackling add the dry red chillies, curry leaves, cinnamon, cloves and hing.
Once it gives a nice aroma, add the curd-besan mixture and bring it to a boil.
Once it starts boiling, reduce the flame and simmer for 5 mins.
Check the seasoning and sprinkle some coriander leaves.
The Gujarati kadhi is ready to be served with steam rice/hot fulka/roti or whatever you like.
