How to Cook Doodh Jalebi

Ingredients for Doodh Jalebi :

  • 3 cup all purpose flour
  • 1 cup yoghurt (curd)
  • 1/2 cup corn flour
  • 3 cup sugar
  • 5 strand saffron
  • 3 tablespoon powdered green cardamom
  • 4 tablespoon ghee
  • 2 tablespoon baking soda
  • 4 cup sunflower oil
  • 4 cup water
  • 4 teaspoon rose essence
  • 2 drops edible food color
  • 1/2 cup milk

How to Cook Doodh Jalebi :

  1. To make this delicious dessert recipe, start by preparing the jalebi batter. For the same, take a bowl to mix all purpose flour (maida), corn flour and baking soda. Then, add ghee and orange food colour to this mixture.
  2. To give a thick consistency to this batter, add curd and water as required. Mix well until it is thick but has a runny consistency. Keep it aside for 8 hours or overnight fermentation.
  3. Next, prepare the sugar syrup, heat a pan with water over medium flame and add sugar to it. Bring them to a boil and keep stirring until a thick consistency is achieved. Remove and add saffron, cardamom powder and rose essence. Stir well.
  4. Heat oil in a deep pan or kadhai over medium flame for deep frying. Line a tray with butter paper or foil.
  5. Take a muslin cloth and add the jalebi batter to it. Pierce a hole in the cloth. Squeeze the muslin cloth to make concentric circles. Fry till jalebis turn golden in colour. Remove and drain the excess oil using clean paper towels.
  6. Then, soak the jalebis in the warm sugar syrup for 2-3 minutes. Now remove from the syrup and place it on a tray lined with butter paper or foil.
  7. Decorate with silver foil and serve them with hot milk or rabri.
