How to Cook Baigan Bhaja

Ingredients for Baigan Bhaja :

  • 3 eggplant/ brinjal
  • 5 green chilli
  • salt as required
  • 5 cloves garlic
  • 4 tablespoon refined oil

How to Cook Baigan Bhaja :

  1. To prepare this side dish recipe, wash and rinse the eggplant well in water and then cut them in round slices.
  2. Peel the garlic cloves and crush it in a pestle and mortar along with washed green chillies to make a nice paste for marination. Marinate the eggplant slices with this chilli-garlic paste. Apply a bit of turmeric and salt as well on these eggplant slices and keep this bowl aside for 15 minutes.
  3. Put a frying pan on medium flame and heat oil in it. When the oil is hot enough, fry the marinated eggplant slices till crisp and golden brown from both sides.
  4. Enjoy!
