Ingredients for Baigan Bhaja :
- 3 eggplant/ brinjal
- 5 green chilli
- salt as required
- 5 cloves garlic
- 4 tablespoon refined oil
How to Cook Baigan Bhaja :
- To prepare this side dish recipe, wash and rinse the eggplant well in water and then cut them in round slices.
- Peel the garlic cloves and crush it in a pestle and mortar along with washed green chillies to make a nice paste for marination. Marinate the eggplant slices with this chilli-garlic paste. Apply a bit of turmeric and salt as well on these eggplant slices and keep this bowl aside for 15 minutes.
- Put a frying pan on medium flame and heat oil in it. When the oil is hot enough, fry the marinated eggplant slices till crisp and golden brown from both sides.
