Ingredients for Aloo Ki Launji :

  • 4 potato
  • 8 peppercorns
  • 1 teaspoon onion seeds
  • 2 green chilli
  • 2 tomato
  • water as required
  • 2 black cardamom
  • 2 pinches asafoetida
  • 3 tablespoon mustard oil
  • 1 bay leaf
  • 1 tablespoon granulated sugar
  • 1 pinch red chilli powder
  • 1/2 tablespoon lemon juice
  • 1 pinch turmeric
  • salt as required
  • 1 handful coriander leaves

How to Cook Aloo Ki Launji :

  1. Add peppercorn and cardamom in a blender jar and grind to form a coarse mixture. Take a non-stick pan, add oil in it and heat it over medium flame. When oil bubble rises, add asafoetida, bay leaf, onion seeds and coarse spice mixture. Stir-fry for a minute or two.
  2. Meanwhile cut potatoes in thin slices, chop green chillies and tomatoes separately. Add potatoes and green chillies in the pan. Mix the ingredients well. Cook until potatoes are tender and slightly cooked. Add tomatoes along with turmeric and red chilli powder.
  3. Sprinkle salt and saute it over a medium flame. Add sugar and lemon juice. Stir-fry till sugar starts to leave moisture and then add water to it. Cover with a lid and let it simmer for a while.
  4. When gravy becomes a little thick, remove from flame and transfer it in a bowl. Garnish it with coriander leaves and serve it hot with roti or paratha.
